Recipe Corner: Simple Mincemeat Hand Pies

A very easy holiday and winter themed recipe comes to mind, recently.I didn’t know what recipe to share, and this one seemed pretty good for a fit! Last year, in early December, my mother had gotten a craving for a taste of her past years. Mincemeat hand pies. We went to the store in search of the relic of an ingredient, and to my surprise, it was right next to the jams and jellies that we often bought for our tea parties and breakfast foods. A quick purchase, and we were off. This carried over to this past Christmas, where my family had a Christmas brunch with my sister’s family, as well. A lovely array of savory and sweet, these hand pies fit right in.

Ingredients: 

 

1 11 oz jar of Tiptree’s Mincemeat 

2 Individual packages of pre-made pie crust (any brand) OR homemade pie crust

4 eggs for the egg wash top coat

 

Directions: 

Preheat your oven to 350°F, and either grease a cookie sheet or place parchment paper on it. 

Roll out the dough on a flat, lightly floured surface. Be careful not to roll the dough too thinly, or to work the dough too much, overall. Pie crust is very delicate after being handled frequently. 

Take the rim of a drinking glass, or a circular cookie cutter of a larger size, and cut into the dough. This will be the size of your hand pie, with the circle folded in half. 

Take a semi-large spoonful of the mincemeat from the jar and place into the middle of your circled dough. 

Now, with your fingers, take the dough and fold like a taco shell. Pinch the sides together to form little waves, or a solid seal. This will be a good time to test out your rough circle to mincemeat ratio. 

Repeat these steps until you have formed as many pies as you would like. 

Beat the eggs in a bowl, and take a brush to lightly coat the pies with. Make sure it’s not too thick, or thin! 

Place the pies into the oven, and bake until golden brown, or the filling slightly bubbles at the side. If the dough is not cooked, and starts to get too dark, you may place foil over the pies so that they can cook without browning. 

Remove from the oven and let cool. You may serve hot or cold, it is up to your occasion and personal preference! 

 

That’s it! I know this is an extremely easy recipe, and I hope that it does not disappoint. Mincemeat is a very different type of taste, and I personally had to warm up to it!
