Recipe Corner: Balsamic Cucumber Tomato Salad

This recipe will give you a whisper of summer while still sporting the colors of Christmas! I invented this recipe (with my mom’s help!) not long ago, and it was so good! I suggest some very sharp cheddar and the pickled onions!

 

 

Servings: 1-2.                            Cuisine: Greek.             

 

      Total time: 15 minutes.

Ingredients:

 

½ a cucumber

½ a dry pint of grape tomatoes

1-2 oz of white cheddar

1+ Tablespoons of sliced red onions, preferably pickled

1-2 Tablespoons of feta cheese

Thick balsamic vinegar

Olive oil

Sprinkle of salt

 

 

Directions:

 

Dice cucumber and cheese into bite-sized pieces. Halve grape tomatoes. Place in a bowl. Add onions, and slice if needed. Add feta, then drizzle over the vinegar and a very small amount of olive oil. Sprinkle salt to taste. Enjoy!
