Recipe Corner: Bacon, Chive, and Swiss Quiche.

Quick, easy, and effortless to clean up, quiche is a great meal for anytime! You can prepare it quickly, and then clean up your few dishes and still have over half an hour to do what you like! Sounds great to me!

Total time: About an hour and 10 minutes.

Ingredients:

 

½ pound bacon, diced and cooked.

1 8-oz block swiss cheese, grated

1 9-inch pie crust (I used store-bought, but you could also use this recipe if you like!)

6 eggs

1 cup half & half (heavy cream or milk work fine, too.)

2 Tablespoons of chives, chopped

½ teaspoon of garlic powder

¾ teaspoon of salt

¼ teaspoon pepper

 

 

Directions:

 

Preheat oven to 350°F. Roll out pie crust and place in pan, crimping edges if desired. Place bacon and cheese in bottom of pie crust.

In a mixing bowl, whisk together all other ingredients. Pour into pie pan. Place in the oven for 40-50 minutes until center is puffed. If your crust begins to get too dark too fast, get a strip of aluminum foil and place it carefully but securely around the rim of it.

Allow to stand 5 minutes before cutting. Enjoy!

Want to bake this in a 9x13 for a make-ahead freezer breakfast? Here's the modified recipe, but crustless:


Ingredients:

1 pound bacon, diced and cooked. 

2 8-oz blocks of swiss cheese, grated

9 eggs

2 cups half & half (heavy cream or milk work fine, too.)

4 Tablespoons of chives, chopped

1 teaspoon of garlic powder

1 & 1/2 teaspoons of salt 

1/2 teaspoon pepper


Directions:

Preheat oven to 350°F. Heavily grease a 9x13 baking pan. Place bacon and cheese in the bottom of the pan. 

In a mixing bowl, whisk together all other ingredients. Pour into baking pan. Place in the oven for 40-50 minutes until center is puffed and doesn't jiggle.

Allow to stand 5 minutes before cutting into 12 equal pieces. When it's cooled, lay out the squares on a sheet pan covered in parchment. After squares are frozen, seal in a freezer bag. 

When you're ready to eat, microwave for 45 seconds or more. Enjoy!
