Recipe Corner: Snickerdoodle Blondies

What a tasty fall treat! Up until now we have not had any seasonally based recipes, but I thought it would be fun to sprinkle in a couple here and there. I mean, what fun is autumn without cinnamon? These yummy treats are perfect for when you need a little something that reminds you of scarves and orange and falling leaves. Let me know what you think of them in the comments below!

Ingredients:

 

DOUGH:

1 cup of salted butter, softened

2 cups of packed brown sugar

2 eggs

1 Tablespoon of vanilla

2 & 2/3 cups of all-purpose flour

2 teaspoons of baking powder

1 teaspoon of salt

1 teaspoon of ground cinnamon

 

TOPPING:

2 Tablespoons of white sugar

2 teaspoons of ground cinnamon

 

Directions:

 

Preheat oven to 350°F. Lightly grease a 9x13 baking pan.

Cream together the butter and sugar. Add in eggs and vanilla and mix again. When fully combined, add dry ingredients and slowly mix in. Dough will be thick!

Press dough into pan. In a small bowl, mix together topping ingredients and disperse over dough evenly. Bake for 25-30 minutes or until the surface springs back when gently pressed. Allow to cool for 5-10 minutes, cut, and enjoy!
