Recipe Corner: Basic Muffins

Though we’re still in the middle of summer, the back-to-school rush will soon be upon us again. In our house, we enjoy having breakfast ready in the mornings, and these are the perfect muffins to freeze for a quick breakfast fix. In addition, this recipe is perfect for adding all kinds of tasty mix-ins. Personalize the recipe however you like, or use one of the suggestions below!

Ingredients:

 

1 & ½ cups of all-purpose flour

1/3 a cup of granulated white sugar

¼ a cup of brown sugar, packed

½ a teaspoon of baking powder

½ a teaspoon of baking soda

½ a teaspoon of salt

1 stick (1/2 cup) of salted butter, melted

½ a cup of milk

2 eggs

1 teaspoon of vanilla extract

 

+ one of the mix-ins below. (Or leave it plain and just have sweet muffins!)

 

Directions:

 

Preheat oven to 350°F. Lightly grease a dozen muffin tins.

In a large bowl, mix flour, both sugars, baking powder, baking soda, and salt. Add in melted butter, milk, eggs, and vanilla extract. Stir until fully combined.

Add in mix-ins and stir. Distribute batter evenly in muffin tins. I use an ice cream scoop for this! Bake for 20 minutes, or until the muffins are golden brown. Serve warm, or allow to cool and freeze for easy breakfasts. Enjoy!

 

Mix-ins:

 

Chocolate chip, butterscotch chip, cinnamon chip, etc.

 

Add 6 oz (half a typical bag; 2/3 cup) of your preferred chip into batter and stir.

 

Blueberry Lemon

 

Add the zest and juice of one lemon to the batter when the butter is added. Combine 1 cup of blueberries with 2 Tablespoons of all-purpose flour in a small bowl. Add to batter and fold carefully to avoid the batter becoming purple.

 

Peach Streusel

 

Slice about 1 & ½ cups of frozen peaches into small chunks. Add to batter and mix in. In a separate bowl, stir together 1/3 a cup of packed brown sugar, 1 Tablespoon of granulated white cugar, ½ a teaspoon of ground cinnamon, ¼ a cup of salted butter (melted), and 2/3 a cup of all-purpose flour. Stir together until crumbly, then add to the tops of the muffins before baking. Muffins may be a slightly different consistency than original recipe due to the moisture of the peaches as they bake.

 

Chocolate Chocolate Chip

 

Add 3 Tablespoons of cocoa to the dry ingredients. Add 3 extra Tablespoons of milk when the rest of the milk is added. Stir in 6 oz (2/3 cup) of chocolate chips when the mix-ins are added in. Muffins will be more dense than original recipe.
