Recipe Corner: Fluffy Pancakes

Not joking, these are seriously the best pancakes I have ever tasted. We make them at least three times a month, which is very often for our family. :) Plus, they’re filling, so you don’t need to make as many!

 

Servings: 20 pancakes.                            Cuisine: American.          

 

      Total time: 20-30 minutes.

Ingredients:

 

½ of a cup of salted butter

2 & ½  cups of milk

2 eggs

1 & ½ teaspoons of vanilla extract

1 cup of whole wheat flour

1 cup of all-purpose flour

1 cup of quinoa flour (you can substitute whole wheat or all-purpose if you’d rather)

¼ of a cup sugar

2 Tablespoons of baking powder

1 teaspoon salt

Butter for pan

Chocolate chips or blueberries (optional)

 

 

Directions: 

 

Warm the milk and butter in a pot, until the butter is fully melted. Whisk the eggs in a small bowl. Add the eggs to the milk and butter, but make sure the milk isn’t too hot. If it’s too warm, it will cook the egg. You should be able to hold your finger in the milk for ten seconds. Add vanilla and stir again.

Mix the flours, sugar, baking powder, and salt in a large bowl. Add the milk mixture to the flour. Stir until just combined. Some lumps are okay. Be careful not to overstir, or they won’t be as fluffy.

Heat some butter in a pan. Measure out 1/3 cup of batter and pour it into the pan. If you wish, sprinkle some chocolate chips or blueberries in the batter for a special treat immediately after pouring the batter into the pan. Cook 1-2 minutes, until the edges look semi-cooked and it’s bubbling slightly, then flip and cook 1-2 minutes on the other side. Continue cooking the rest of the pancakes. Serve with butter and maple syrup, or the topping of your choice.


Note added on 5/8/2024: 


Want to freeze the pancakes for easy mornings? Allow them to cool, then place on a sheet pan covered with parchment paper as flat as possible. When the pancakes are frozen, place in a freezer bag and store in freezer. When you're ready to eat them, enjoy them frozen, or microwave for 30+ seconds and add toppings. Enjoy!
